How to customize the Ubuntu system

now the company has a need to get rid of Ubuntu"s desktop system and make it simple, leaving only some basic services. There are two ways of thinking: one is to subtract from an off-the-shelf Ubuntu system to remove some off-the-shelf services, and the other is to compile the kernel and customize to add some new services. Which way is easier to achieve? Or is there any good way. Xiaobai, please give me a lot of advice, thank you.

use ubuntu server

A suggestion: use the server version of Debian directly, which is the mini version, without a user interface, and should be able to meet the needs. Ubuntu's desktop system is still a bit huge after it has been removed.

if the graphical desktop system takes up resources, you can turn it off or switch to the server version.
if it is a size consideration, you can customize the tailoring and compilation of the system, which is troublesome to implement.
